EGG BAKE
This egg casserole is a lifesaver for busy mornings. Prep it once, and you’ve got breakfast sorted for the whole week.
INGREDIENTS
8 large eggs
2 cup low fat cottage cheese
1 cup shredded lite cheese
1 package of a precooked chicken sausage chopped
1 whole onion, chopped
1 cup veggies (I like asparagus and mushrooms)
1 tbsp olive oil
Garlic powder, salt, and pepper to taste
INSTRUCTIONS
Preheat your oven to 350°F.
In a large bowl, whisk together the eggs and cottage cheese until well combined.
In a skillet over medium heat, add the olive oil and veggies. Cook until tender.
Add your veggies and chicken sausage to the egg mixture.
Stir in the shredded cheese and season with garlic powder, salt, and pepper to taste.
Pour the mixture into a greased 9x13 casserole dish.
Bake for 45-55 minutes or until the top is set and no longer liquidy.
Let it cool, slice it into 6 squares.
